Quick Spinach Curry

Spinach Curry


  • 12 oz fresh spinach chopped
  • 2 small garlic cloves
  • 1 green chili split lengthwise
  • ½ teaspoon canola oil
  • ½ cup water
  • 3 teaspoons milk
  • Salt to taste
  • Lemon juice to taste


  • In a covered saucepan add oil and add chopped garlic and sauté for about 1 minute
  • Add spinach and green chili and mix well
  • Add water, salt and cover the saucepan and cook for about 7 – 8 minutes
  • Add milk and cook for another 1 minute.  Do not cover  saucepan at this point
  • Once the spinach curry has cooled down a bit add lemon juice
  • Serve warm with rice

Yields: 2 servings as a side dish
