Snake Gourd Curry


  • 1 cup chopped snake gourd
  • 1 ½ tablespoons canola oil
  • ¼ teaspoon mustard seed
  • ¼ cup red onion sliced
  • 2 cloves garlic finely chopped
  • ½ teaspoon fennel seed
  • 2 cups water
  • 1 teaspoon chili powder
  • 3 tablespoon milk
  • Salt to taste


  • Split snake gourd lengthwise and remove seeds.  Then split each half into 2 and chop them into ½ inch pieces
  • In a skillet add 1 tablespoon canola oil and add the chopped snake gourd and fry for about 5 minutes or until they are tender and slightly brown.  Keep aside
  • In a covered saucepan add the rest of the canola oil and add mustard seeds
  • When the mustard seed start to splatter add onion and garlic and sauté until they are golden brown
  • Add fennel seeds and fry for another 1 minute
  • Add sautéed snake gourd pieces to the saucepan and mix well
  • Add water, chili powder, salt and cover and cook for about 10 minutes or until the sauce thickens
  • Add milk and cook for another 2 – 3 minutes
  • Serve with rice or pittu

Yields: 2 – 3 servings as a side dish
