Whole Wheat Flax Seed Muffins


Ingredients

  • ¾ cup all-purpose flour
  • ¼ cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/8 teaspoon salt
  • 1/3 cup dark brown sugar
  • 1 egg
  • ¾ cup milk
  • 3 tablespoons butter
  • 1 teaspoon vanilla essence
  • 1 tablespoon flax seed
  • ¼  cup raisins
  • ¼ cup chopped walnuts

Method

  • Preheat oven to 375° F
  • Grease 8 muffin cups
  • In a mixing bowl beat egg and sugar with electric mixer
  • Add sugar and beat.  Add milk, oil and vanilla essence and beat well
  • Add flax seed and mix
  • Sift together flours, baking powder and salt
  • Add the flour mixture to the egg mixture slowly and mix well
  • Add raisins and walnuts and mix
  • Spoon the mixture into muffin cups and bake for about 25 – 30 minutes or until a skewer inserted in the middle of the muffin comes out clean
  • Cool on wire rack

Yields 8 muffins
