Cranberry Banana Bread



  • 2 cups all purpose flour
  • ¾ cup castor sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup cooking oil such as canola oil
  • 3 tablespoons orange juice
  • ½ teaspoon orange peel
  • ½ teaspoon orange essence
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup mashed banana (about 2-3 medium)
  • ½ cup walnuts
  • ½ cup dried cranberries


  • Pre heat oven to 350F
  • Butter a 9×5 inch loaf pan and set aside.
  • In a large mixing bowl beat eggs lightly and add sugar, orange juice, oil, vanilla extract, orange essence, and orange peel.
  • Add mashed banana and mix well
  • In a separate bowl sift together flour, salt, and baking powder
  • Slowly add the flour mixture into banana mixture and mix thoroughly
  • Fold in chopped walnuts and cranberries
  • Pour into prepared pan and bake for about 1 hour or a tooth pick inserted in the middle of loaf comes out clean


Kale and Carrot Stir Fry



  • 2 cups finely shredded fresh kale leaves
  • ½ cup grated carrot
  • ½ cup water
  • 1 teaspoon chili powder
  • 2 tablespoons shredded unsweetened coconut
  • 2 teaspoons canola oil
  • ½ cup chopped red onion
  • 3-4 dried red chili broken into 2 pieces



  • Wash and dry kale leaves.  Once they are dry shred the leaves.
  • Add kale to a skillet with water, chili powder and salt and cover and cook until water is almost absorbed
  • Add shredded carrot and cook further one minute or until the mixture becomes dry.
  • Add coconut and mix well and cook further one minute stirring continuously
  • Transfer to a serving bowl
  • Wipe out the skillet and add oil and once it is hot add onion and sauté until golden brown
  • Add red chili and fry on very low flame for about 30 seconds
  • Add the cooked vegetables to the fried onion and mix well
  • Serve with rice
  • Serves 3 servings as a side dish

Creamy Maple Oatmeal with Cranberries



  • 1 cup old fashioned rolled oats
  • 2 ½  cups      water
  • 1 cup milk
  • ¼ cup raisins
  • ¼ cup dried cranberries
  • ¼ cup maple syrup
  • 2 tablespoons finely chopped walnuts
  • Cinnamon
  • Pinch of salt


  • Boil water in a saucepan
  • Once water starts boiling add oats, raisins, cranberries, and salt and cook on medium heat for about 5-7 minutes (I      always cook oatmeal uncovered)
  • Add milk and cook until oats is thick and creamy
  • Immediately stir in maple syrup and let stand for about 10 minutes
  • Transfer into 2 bowls and top with walnuts and sprinkle cinnamon.
  • Serves 2
