Cranberry Banana Bread



  • 2 cups all purpose flour
  • ¾ cup castor sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup cooking oil such as canola oil
  • 3 tablespoons orange juice
  • ½ teaspoon orange peel
  • ½ teaspoon orange essence
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup mashed banana (about 2-3 medium)
  • ½ cup walnuts
  • ½ cup dried cranberries


  • Pre heat oven to 350F
  • Butter a 9×5 inch loaf pan and set aside.
  • In a large mixing bowl beat eggs lightly and add sugar, orange juice, oil, vanilla extract, orange essence, and orange peel.
  • Add mashed banana and mix well
  • In a separate bowl sift together flour, salt, and baking powder
  • Slowly add the flour mixture into banana mixture and mix thoroughly
  • Fold in chopped walnuts and cranberries
  • Pour into prepared pan and bake for about 1 hour or a tooth pick inserted in the middle of loaf comes out clean
