Ingredients:
- 4 oz Penne or Rotini
- 1 lb mixed vegetables (mushrooms, bell pepper, broccoli, carrots, zucchini etc.)
- 2 teaspoons olive oil
- 2 cloves garlic
- 1/2 teaspoon crushed red pepper
- 2 tablespoons almond butter
- 1/4 cup coconut milk
- 2 tablespoons water
- 2 tablespoons chopped almond toasted
