Fava Bean and Cauliflower Curry

Fava bean is something new that I have never bought or cooked.  Since I have been trying to include as much protein as possible in dishes I thought to use fava beans for this recipe.

I bought the blanched dried fava beans which does not need overnight soaking.  It can be just soaked for a couple of hours and cooked on a stove top for about 45 minutes or until tender which is what I did.  ½ cup fava beans will yield more than one cup of cooked beans.  Here is the recipe for this curry.

This is a hot and spicy dish which tastes great when served with white basmati rice or Chappatis.


  • ¼ cup sliced red onions
  • 4 cloves garlic
  • ½ inch piece ginger
  • 1 small tomato
  • 1 tablespoon oil
  • 2 teaspoons chili powder
  • ¼ teaspoon turmeric powder
  • 1 teaspoon garam masala
  • ¼ cup coconut milk
  • 12 oz cauliflower florets
  • 1 cup cooked fava beans
  • Salt to taste


  • Finely chop garlic and ginger
  • Add oil to a saucepan and fry onion until tender
  • Add garlic and ginger and fry until golden brown
  • Chop tomato into chunks and add to the saucepan with salt, chili powder and turmeric powder.
  • Add little water at a time and cover and cook until tomato becomes to sauce consistency
  • Add garam masala and cook for another 5 minutes adding enough water so the sauce does not become dry.
  • Add cauliflower florets to the saucepan and mix well until florets are covered with tomato sauce
  • Add coconut milk and cover and cook for 10 minutes on low flame
  • Add cooked fava beans and mix well and cook for further 2 minutes.
  • Serve with rice or Chappati
  • Yield: 3-4 as a side dish
