This delicious wholesome breakfast dish is quite easy to make and does not call for ingredients that some one need to run to the store to pick up. When I cook oatmeal for breakfast, I always add dried fruits and nuts. A while ago I saw a recipe similar to this – baked chocolate quinoa. So I thought why not make the same with oatmeal, leave out cocoa and top with fruit compote. Amazingly this came out pretty good.
I would suggest make the oatmeal and place in a tray and leave it in the fridge overnight that will reduce the cooking time for breakfast and it would be easy to cut the cooked oatmeal into triangles. Enjoy!
For the Oatmeal:
- 1 cup steel cut oatmeal
- 2 cups water
- ½ cup milk
- ¼ teaspoon cinnamon
- 2 tablespoon brown sugar
- dash of salt
- butter or oil to grease pan and extra butter to toast oatmeal
For the Fruit Compote:
- 1 granny smith apple
- 12 dates
- 8-10 dried apricots
- ¼ cup raisins
- ¼ cup maple syrup
- 1 cup water
Method:

- ¼ teaspoon cinnamon
Method:
- Bring water and milk to boil and stir in oats, brown sugar, salt and cinnamon and reduce heat and simmer for about 15 minutes or until thick stirring occasionally.
- Grease a 6 inch square pan with butter and spoon cooked oatmeal into the pan and cool to room temperature. Cover and chill until set – you can leave it overnight.
- To make the fruit compote, peel and core the apple. Chop roughly into very small pieces. Combine water, maple sugar, cinnamon and add fruits and cook until they are soft and liquid is syrupy. If needed add little water at a time until fruits are tender.
- To assemble, invert chilled oatmeal onto a cutting board/plate. With a sharp knife cut oatmeal into 8 triangles.
- Heat a skillet and add 1 tablespoon butter. Once it starts sizzling place oatmeal triangles and cook until golden brown crispy on the outside. Turn over and cook the other side until crispy. Repeat procedure with remaining oatmeal triangles adding butter each time.
- To serve, place one or two oatmeal triangles on a plate and top with fruit compote.
- Yields: 4 servings (2 triangles per serving)
