Banana Waffle


This is a quite simple and easy to make waffle that I made using the waffle tray that came with the sandwich toaster I bought.  This sandwich toaster I bought had 3 double trays.  They are sandwich press, waffle press and the other one to grill vegetables.  The size of the waffle press tray is about 4-inch x 4 inch.  I added pea powder/protein powder to the flour to improve the health benefits.

Ingredients:

  • 1 egg (I used the Eggland’s best egg size large)
  • 1 tablespoon cooking oil
  • 1 tablespoon castor sugar
  • ½ cup milk or almond milk
  • 1 medium banana (after peeling about 3 ½ – 4 oz)
  • 1 ½ tablespoons pea protein powder + all purpose flour that comes to a total of ½ cup
  • 1 tablespoons ground almond/almond meal
  • 1 teaspoon baking powder
  • Pinch of salt
  • Butter for spreading
  • Toasted pecans
  • Maple syrup

Method:

  • In a bowl mix together egg, and sugar until pale and smooth. 
  • Add cooking oil and milk to the egg mixture and mix thoroughly
  • In a separate bowl, mash the banana with a fork. Set aside
  • In a large bowl mix together the flours, baking powder and salt.
  • Slowly add the egg mixture alternating with mashed banana to the flour mixture and combine well. Do not over mix.
  • Heat the waffle maker/toaster and lightly butter
  • Add spoonful to the waffle tin and close the lid and cook for about 9 minutes
  • Spread a little butter while warm and sprinkle with maple syrup and chopped pecan nuts
  • Yields: 4 waffles
