I have posted date bread in the past. So why am I posting another date bread recipe again? The main purpose is this recipe does not involve butter or even margarine and low quantity sugar that makes this bread quite healthy. To say more, dates paired with walnuts provides a full house of fiber and omega-3 fats and using whole wheat flour makes this bread wholesome that is soft and mildly sweet with dates and crunchy walnuts. Adding orange extract gives a nice aroma and enhances the flavor of date loaf.
- 10 oz pitted dates chopped
- 1 cup boiling water
- 1 teaspoon baking soda
- 1 ¼ cups whole wheat flour
- ¾ cup all purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 2/3 cup butter milk
- ¼ cup canola oil
- 1/3 cup dark brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- ½ teaspoon orange extract
- 1 cup walnuts chopped
- Preheat oven to 350 F. Add parchment paper to a 8 ½ x 4 ½ inch loaf pan and grease lightly.
- In a large bowl combine dates, boiling water and baking soda and cover and let stand for about 30 minutes (or until dates has softened)
- Mix whole wheat flour, all purpose flour, salt, and baking powder together.
- In a separate bowl whisk buttermilk, sugar, oil and egg until smooth. Add vanilla and orange extracts and mix well. Stir in the dates and soaking water.
- Gently fold the buttermilk mixture into flour mixture and mix until just combined. Do not over mix
- Fold in walnuts
- Transfer batter into the prepared baking pan and bake for about 55 minutes to an hour or until a tooth pick inserted in the middle comes out clean
- Cool on wire rack for about 10 minutes. Remove bread from loaf pan and let cool completely.
- Cut into thick slices and spread butter lightly for extra richness. Serve with a cup of hot tea.
